Lately I’ve had a massive change of heart when it comes to my diet, since I’ve started reading Clean & Lean by James Duigan (Elle Macpherson’s nutritionist and trainer) it’s just changed my whole outlook on food. I mean you could of gave me a brownie and a glass of wine any day and I wouldn’t have bat and eyelid, but rather than crash dieting for summer I just want to consistently eat food that is ‘good’ for my body. Don’t get me wrong there will still be cheat days for meals or evenings out but overall I want to change my diet for good.
I started making changes around two weeks ago and I feel amazing, I don’t feel as tired and have so much more energy. I’ve cut out sugar and found that I haven’t craved it since as I’ve been eating foods that I enjoy but that are better for me. The other morning I made the most incredible breakfast which was super healthy, filling and delicious – I wanted to share the recipe so you can give it a whirl yourself, oh, and it takes less than 5 minutes to make so there really is no excuse!
What you’ll need…
– Rolled oats
– Almond milk (you can use whatever milk you like, I just used almond as it’s healthier)
– 1 medium banana (optional)
– 1 Kiwi
– A handful of blueberries
– A handful of raspberries
– A small handful of Almonds
How to make…
Take a cup full of Almond milk (I didn’t use an exact measurement I just used around 3/4 of a regular drinking glass) and place into a saucepan on a low heat, add a splash of water and the same amount of oats (so in my case 3/4 of a regular drinking glass). I chopped up a banana then mashed it until it was soft, I then added it into my oats to add some flavour, this stage is optional! Leave for 4/5 minutes until the oats are ready to eat – it depends on how you like the consistency of your oats as to how long you cook them for, I cooked mine for four minutes and it was perfect.
While your oats are cooling down chop up your kiwi to add on top, when your oats have cooled slightly pour them into a bowl, I added a drizzle of low fat honey on top to add some sweetness. I then added my kiwi, almond nuts, raspberries and blueberries then sprinkled with a drizzle of cinnamon! Et voila… tasty oats with fruit and nuts, a healthy, filling breakfast which is super easy to make! Add any toppings and fruit that you like – let me know what you make!
